From what I have read, as long as you have a UK address that you can use, relatives, friends etc, you should be able to renew the driving licence by post.
I am pretty sure that you cannot do so using an overseas address, at least not in Australia.
Technically you need to be resident in the UK to renew a licence, (Residence appears to be proved by having a UK address), but some people have spoken to the DVLA, and explained short term working overseas, to get around this.
Just a quick thought. When my wife moved to the UK, she swapped her Australian licence for a British one, and on returning to Australia a few years later, she swapped her British Licence for an Australian one again. Hence only ever needing one licence.
